Mix the salt and ginger together and let stand for 15 minutes. Rinse the ginger under cold running water. Drain well. Heat the oil in a frying pan. When the oil is hot add the garlic and ginger. Cook for 5 seconds stirring constantly. Add the beef fry, stirring constantly for 3 minutes. Add the soy sauce, sherry, sugar, and pepper. Cook for 1 minute, stirring constantly.
